The Huntsman is a chef-driven restaurant built around a simple idea: great food has the power to bring people together. Founded in Tallahassee in 2022, The Huntsman was created as a place where thoughtful cooking, genuine hospitality, and a strong sense of community could exist under one roof. What began as a local restaurant has grown into a business deeply connected to the people who live, work, and gather around us.
Our approach to food is rooted in craftsmanship and curiosity. We work with local and regional products whenever possible, while drawing inspiration from culinary traditions from around the world. Our menus change with the seasons and reflect our commitment to using ingredients thoughtfully, minimizing waste, and continually learning. We believe that a restaurant can be both creative and approachable—offering guests something memorable while still feeling like a place they can return to again and again.
In 2026, we expanded The Huntsman to the 30A community, opening our second location near Carillon Beach. This expansion has allowed us to bring our style of hospitality to a new community while also creating opportunities for local employment, partnerships, and collaboration. Beyond the dining room, we offer private dining, chef experiences, and provisions designed to serve both residents and visitors.
Serving our community means more to us than simply operating a restaurant. Our team members are an important part of the communities in which we operate, and we strive to create meaningful opportunities for hospitality professionals to learn, grow, and build careers. We also believe in supporting the farmers, fishermen, producers, purveyors, and other small businesses that help make our restaurants possible.
We are particularly passionate about introducing our guests to ingredients, techniques, and cuisines that may be unfamiliar to them. In Tallahassee and along 30A, we have an opportunity to expand the local dining conversation while remaining connected to the people and places around us.
At its heart, The Huntsman is about hospitality. Whether someone is joining us for a special celebration, a casual dinner, a private event, or simply discovering us for the first time, we want them to feel welcomed and cared for.
